Bartending 101 - This. Is. The. Painkiller.

(Insert far too many Judas Priest jokes here.)


Still going Tiki mad here. Painkiller is what I call entry-level Tiki- light, with a respectable punch, but mostly fruit juice, very easy to drink and with few ingredients. Pretty hard to muck up tbh.


Ingredients

35ml White Rum- Bacardi Blanco can’t be beat, clean and fresh. You can totally swap it for a black rum if preferred. Goslings works beautifully, especially if you throw in 10ml of Averna too for a bitter hit. In fact, do that anyway, everything’s better with Averna.

25ml Coconut liqueur- Malibu’s the default option, but what I like to use is 1800 Coconut tequila. A bit punchier, but beautiful stuff In the mix, or even on its own.

70ml pineapple juice


Alternatively, you could use 50ml rum and 15-20ml of a coconut cream. The drink’s a lot smoother this way, but lacks any real punch. Depends what you’re looking for in the drink really.


Method

Fill a highball or Tiki glass with rocks ice. Shake thoroughly to let the pineapple juice build a good head, then strain into glass. Top with a good splash of bitters, or even float your Averna on top. Garnish with a healthy chunk of pineapple and a few leaves.
