Bartending 101 - The Darkest and Stormiest of the Dark 'n Stormys

To be clear, if it's not got Goslings in it, it's not actually a Dark 'n Stormy. Goslings has spent a lot of money over a long time defending their own trademark. I've definitely tampered and abused the original recipe a fair bit (cough), but it's a filthy drink. (Filthy means good.)

So, without further ado, my interpretation -


(an excellent wee album to listen to while making this. Just don't get too excited and start kicking chairs and/or customers over)


Ingredients

50ml Goslings Black Seal Rum - accept no substitutes. Though the Kraken will do in a pinch.

15ml 1800 Silver

25ml lime juice

35ml ginger syrup

pinch salt


Ginger Syrup: this is an absolute doss to make, so long as you've got a blender and five minutes to kill. Get a couple of packs of fresh ginger, chop it up into little buttons, throw an equal weight of sugar and boiling water into a blender and blitz to make a paste. Make sure that lid's on securely, otherwise you'll end up with hot sugar-ginger water all over your bar top that takes weeks to clean off. Learn from my mistakes.

Fine strain with a big chef's chinois (if you use one of your own fine strainers you'll be at it for like a week straight), then leave to chill overnight in a sealed container. If you're careful and keep the bottle sealed and chilled, you'll get a fortnight out of it at it's best.

Method:

Couldn't be easier. Building in a loaded highball, start with your lime juice, salt, tequila and ginger. Top up to 3/4 or so full with soda water, then pour your measure of rum over the top of the ice to float it. Add a pinch of black pepper and straw. And remind the customer to stir the drink before they drink it, lest they end up with all the rum at the end. Which is kinda fun too if you're tempted.
