Bartending 101 - Paper Planes (makeshift wings)

Whether or not AFI are any good anymore, this drink definitely is. It’s a slightly heady drink, being almost entirely spirits, but the harshness of the bourbon is rounded and softened by aperol while giving a savoury note from the averna. In essence, it’s a whiskey sour without ice (also known as ‘up’) and the bitters pulled right up into the foreground. Key words here are strong, savoury and smooth.
Ingredients
25ml Bourbon - Jim Beam’s a nice choice
15ml Aperol
15ml Averna
15ml lemon juice
(to build into a long drink over ice, use 35ml:25ml:25ml:25ml)
Method
Vigourously shake all over ice, and fine strain into a coupe glass or a Nick and Nora glass (as above). Garnish with a splash of angostura bitters and a lemon twist if you’re feeling fancy.
Alternatively, Swap out the bourbon for an Anejo Tequila for a punchier drink that’s still rather lovely.
