Bartending 101 - Bloody Bloody Marys

I still argue the plural should be Bloody Maries, but everyone pretends to ignore me when I suggest this so I guess I should just let it die. First things first, there is no wrong garnish with Bloody Marys. It's kind of like Tiki, the more the merrier! Check out liquor.com for some truly amazing constructions, and Pinterest is just mad for them. Me, I'm happy enough with whatever's at hand. Cucumber's a really decent swap-in as and when you run out of celery (which, if you're selling them in volume, happens a lot more than you'd like, trust me). We'll talk about a few alternatives after, but for now lets just go for the classic and original: Ingredients

50ml Pepper infused vodka - Absolut Pepper is BANGING, but simpy tossing about 50g of black peppercorns into a decent bottle of vodka for 48 hours and then straining it out will give a really nice fire to it. Ketel One's my usual go-to in this case. LOADS of Worcester sauce. Lea & Perrins is grand, but non-vegan so you can either make your own (which is actually relatively easy) or just hit up your local health food store or supermarket. 60-80ml Fresh Tomato juice- high quality is obviously nicer, but any port in a storm, if you know what I mean. Especially considering everything else you're adding. Sea Salt & Black Pepper 2-3 dashes Angostura bitters 3-4dashes tobasco sauce Method We're building this all in the glass, so batching these is an absolute breeze when you're in a rush. Making four of these will take as long as one if you're properly prepared. In a highball filled with ice, add a generous amount of Worcester sauce - 10/15ml's the sweet spot personally, but I'm yet to find an upper limit where it starts to spoil the drink. Add your bitters and tobasco, stir all with a bar spoon. Pour tomato juice through the ice to layer it on top of the mixture, finish with salt and cracked black pepper and whatever garnishes bring you joy. Alternatives/Options -Swap vodka for tequila for a Bloody Maria (way better, IMO) - Float a splash of Chilean red wine over the top to add an extra dimension and smoothness to the drink (as in the picture above) -In a pint glass, pour half a lager THEN prepare as above for a Bloody Brew. Will kill any hangover stone dead.
